SNACKS
Buffalo Chicken Dip
From Washington DC Unit
2-8oz pk cream cheese-softened
2 c. canned chicken
1 c. blue cheese dressing
2 c. jack or cheddar cheese
Mix all together & put in 2 freezable/microwave containers. Freeze. Defrost & heat as needed. Serve w/chips and/or veggies
Josephinas
4 oz. can green chiles
1 stick butter-softened
1 c. mayonnaise
½ lb Monterey Jack cheese, grated
2 loaves French bread, sliced thin or sliced LONG way into 4 long slices
Mix all ingredients except bread. Spread on bread & heat in oven or convection oven til bubbles. Cut into small pieces
Braunschweiger Ball
1 lb pin braunschweiger (liver sausage) 2 T. sour cream or small pkg
2-3 t. mustard cream cheese
1-2 t horseradish crackers and/or veggies
Sausage & sour cream or cream cheese at room temperature. Mix together all ingredients except crackers. Wet hands & shape into ball or log. Decorate w/parsley or cilantro if desired. Chill. Serve w/crackers, etc.
Grapefruit and Watermelon Appetizer/Salad

Place a layer of red grapefruit chunks and red watermelon chunks in a dish. Sprinkle with feta cheese & top with chopped pecans or walnuts. Provide toothpicks if serving as an appetizer.

When boondocking in your trailer, this is an easy and delicious way to add fruit to your meals. Keep different types of nuts in small plastic bags & sprinkle on individual fruit cups for salad or dessert.
MAIN DISHES
Crock Pot Chicken Soup
2-3 Chicken Fiesta “Smart One” entrees 1 can Rotel tomatoes
3. cans chicken broth 1 can fat-free refried beans
1 can black beans 1 can yellow corn, drained
Place all in a pot & bring to boil. Lower heat & cook for 45 min. Or if using crock pot-use low & cook 4-6 hours. Serves 15.
Pesto Chicken Packets
4 boneless chicken breasts (or pieces you like)
8 tomatoes cut ½” thick
frozen asparagus, peas or whatever you have
½ c basil pesto
¼ c mayonnaise
Mix pesto & mayo.
Layer chicken, tomatoes, veggies & pesto/mayo onto 4 foil packets & put on hot grill or bake in oven for 30-40 minutes. Serve w/rice or noodles.
Crockpot Chili Beef Sandwiches
3-4 lb boneless chuck roast (or could use pork)
2pkg taco seasoning
½ c. barbecue sauce
buns or Kaiser rolls
Brown roast in skillet. Put in crock pot, cover w/taco seasoning & barbecue sauce. Cook 6-8 hours. Shred w/fork & serve on buns or Kaiser rolls.
Monkey Meat Marinade
Soy sauce, beer, garlic cloves, onion, lemon juice, pepper & brown sugar. Mix to taste & marinate pork or chicken cubes several hours or overnite. Put on skewers w/slices of onions, small potatoes, cherry tomatoes, etc. Grill.
Tortellini/Spinach Soup

1 pkg fresh tortellini, 1 box chicken stock, 1 package fresh spinach, nutmeg to taste (1/2-1 tsp), grated parmesan cheese
Cook tortellini in chicken broth according to directions. When cooked, remove & keep warm. Add spinach to chicken broth along with nutmeg until spinach wilts. Serve in bowls and sprinkle on parmesan cheese.
Tuna Tortillas

Tortillas, Diced fresh tomatoes, Canned tuna or chicken, Mexican shredded cheese
Layer diced tomatoes, tuna & cheese on tortilla. Heat in microwave for few seconds. Quick and healthy!
Hillbilly Spaghetti Pie

1 bunch green onions, chopped, 2 T. olive oil, ½ lb extra lean ground beef, ½ lb Italian sausage, 4 links (sweet or hot), casings removed, 4 garlic cloves, minced, 3 T minced fresh parsley. 1- 28oz can crushed tomatoes, ¼ t. red pepper flakes (or more for KICK!), ¼ t. dried oregano, 1 t. salt (or to taste), 2 cups water, 8 oz thin spaghetti, broken into 3” pieces, ¼ c. heavy whipping cream, 4 T. chopped fresh basil, ½ c fresh grated Parmesan cheese, 2 c. grated mozzarella cheese
In 12’ iron skillet, sauté onions in olive oil over medium heat for 5 min. Add beef & sausage & brown over medium-high heat. When almost brown add garlic, pepper flakes, oregano & parsley. When meat is brown, stir in tomatoes, water & salt. Add spaghetti, stir & cover for 8 minutes. Stir after 8 min. & reduce heat & simmer for 6 minutes until pasta is al dente. Add basil, parmesan cheese & cream-stir well. Sprinkle top with mozzarella cheese & put in oven to broil until nicely browned. (Watch carefully—takes about 3 minutes. You don’t want Blackeded Hillbilly Spaghetti Pie!)
SALADS
Marinated Bean Salad
1 (14 ½ oz) can, each green beans, wax beans, lima beans, drained
1 onion, sliced & separated
3/4 c sugar or Splenda
2/3 c oil
½ c vinegar
dill weed, pepper,
Mix beans, onions. Cover w/remaining ingredients. Let sit for 24 hours.
Vegetable Relish Salad

1 can french green beans, drained 1 can Le Sueur early peas, drained
1 can white shoe peg corn, drained ½ c celery, diced
½ onion, chopped 1 small jar pimentos
1 red or yellow bell pepper, chopped
Mix all of above together & put dressing on top.
Dressing:
½ c vinegar, ½ c oil, ¾ c sugar or Splenda
Marinate at least 2 hours in fridge or overnight. Last for 1 week.
Fancy Carrots
1 small package baby carrots
½ c apple juice
2 T. apple jelly
1 T Dijon mustad
salt, pepper to taste
Cook carrots in covered pan until tender. Uncover pan & add jelly & apple juice, salt & pepper.Cook 2-3 more minutes, toss & serve.
DESSERTS
Heavenly Chocolate Pie
1 (7ox) bar Hershey Symphony Chocolate w/almonds and toffee chips
1 (12 oz.) Cool Whip
1 Oreo cookie crumb pie crust
Break up hershey bar & microwave til almost melted—about 1 minute. Cool briefly. Add Cool Whip, blend well. Pour into pie crust & freeze.
Quick Cherry Pie
1 (12 oz.) Cool Whip or dream whip, mixed
1 large pkg cream cheese, softened
dash of milk or yogurt
1 can Cherry or any fruit pie filling
1 Oreo or graham cracker pie crust
Mix cream w/dash milk or yogurt. Blend in Cool Whip. Pour into pie shell. Let sit in fridge for 1 hour. Top w/pie filling.
Crock Pot Chocolate Cake
1 pkg chocolate cake mix 1 pkg INSTANT chocolate pudding mix
1 6 oz. chocolate chips 16 oz sour cream
4 eggs 1 c. water
¾ c vegetable oil
Mix all ingredients. Spray inside of crock pot w/PAM. Pour in mixture & cook 4-5 hours. Scoop out & serve w/Cool Whip or ice cream.
Green Apple Salad/Dessert

4-5 Granny Smith green apples, diced, ½ can honey roasted peanuts, 1 small can crushed pineapple, drained, 4 large snickers bars, chopped, 8 oz Cool Whip
Sprinkle lemon juice over apple pieces. Mix all ingredients together. Refrigerate. Can be made 4-5 hours before serving
Bread
NO-KNEAD BREAD
Michael Dupradia/Heart of TX Unit
3 cups flour,
½ t. yeast,
1 ¼ t. salt,
Cornmeal
In large bowl combine all ingredients + 1 5/8 c water. Sitr. Will be stcky dough. Cover w/plastic wrap & let sit 12-18 hours at room temperature.When dough is dotted w/bubbles, turn onto wax papered flour surface. Fold in half twice. Cover w/plastic wrap & let rest 15 min. With more flour, quickly shape into ball & put in floured/cornmeal towel. Cover w/second towel & let rise 2 hours. One hour before baking, heat 6-8 qt covered pan in 450 degree oven. Carefully remove hot pot and dump the bread into the pot. (looks like a complete mess) Shake pan twice. Cover w/lid & back 30 minutes. Remove lid * bake another 15-30 min. Cool on rack.
Sausage Cornbread

1-2 lbs HOT sausage, 2 pkgs Jiffy cornbread mix, 2-3 apples, cinnamon, sugar or Apple or Peach canned pie filling
Brown sausage in iron skillet. Mix cornbread according to package. Pour cornbread over sausage and bake for 20 minutes at 400 degrees. Cook apples in ½ cup water, sugar to taste & cinnamon. Serve sausage cornbread w/apples and syrup if desired.
